This coffee cake is a no-fuss recipe to bake. Simple to mix all ingredients in one bowl, it is also easy to clean up.

Ingredients

Butter for greasing
125 g Butter
3/4 cup brown sugar, firmly packed
1 cup self-raising flour
3 teaspoons instant coffee powder
2 teaspoons vanilla essence
2 eggs
1/4 cup custard powder
1/2 cup milk

Icing

2 cups icing sugar
2 tablespoons butter, soft
2 teaspoons instant coffee

Tools you need

Scales
Measuring spoons and cups
20cm round cake tin 
Electric mixer and bowl 
Large spoon
Wire rack

Method

Preheat the oven to 180 degrees. Grease the cake tin. 

Combine all ingredients in the medium bowl of an electric mixer. Beat on low speed until ingredients are combined. Then increase speed to medium and beat until mixture is smooth. 

Spoon the mixture into the prepared cake tin. Bake for about 40 minutes or until a skewer inserted into the cake comes out clean. Remove from the oven wearing oven gloves.

Stand a few minutes to cool slightly before turning onto a wire rack to cool.

Ice cake.

Icing Method

Combine icing sugar and butter in a bowl and blend. Add coffee with a teaspoon of hot water to blend. Cream thoroughly until smooth.
