Shared at a recent IDEAS staff luncheon, this slow cooker Massaman Curry was a favourite. 

Ingredients

600g Chuck steak
300g Chat potatoes
1 brown onion
210g Massaman curry paste
Plain flour to coat steak
2 cups chicken stock
400ml Coconut cream
1 tbs fish sauce
1 tbs brown sugar
2 tbs lemon juice

 

Tools you need

Slow Cooker
Knife
Chopping board
Measuring cups and spoons
Scales
Large Spoon
Bowl
 

Method

Coat beef in flour.

Dice onion.

Add steak, onion and potatoes into slow cooker.

Mix Curry paste, chicken stock, coconut cream, fish sauce, brown sugar and lemon juice and pour over ingredients.

Cook in slow cooker for 8 hours on low.

Serve with rice.
